Colli Oriantali del Friuli Azienda Ermacora
Last autumn, the culinary highlight of a three-day visit to
northern Italy was dinner in the Ermacora family kitchen. The
vegetables were all from the kitchen garden; the vinegar had been
matured in a battery of small barrels high in the attic; the hen
had been running around the yard quite contentedly until the day
before we arrived, when Elsa, Dario's wife, decided she'd do for
dinner; and the wines, of course, were from the vines that surround
the house.
Only pudding, a fancy confection from a pasticceria in Cividale,
had been bought. Fresh ingredients, locally sourced, simply and
perfectly prepared. 'What could be better?' asked the chef/patron
of Bocca di Lupo. 'This is what real cooking is all about.' And if
you go to what many people consider to be London's best Italian
restaurant, you'll be able to taste many of Dario Ermacora's
sensational wines.
